- Place eggs in a large saucepan. Cover the eggs entirely with water and bring to a boil. Once boiling, reduce to a simmer and cook 6 to 7 minutes. Turn off heat and use tongs to place eggs in a bowl of cold water. Let cool.
- Peel eggs, discarding shells. Halve eggs, removing egg yolks. Set egg whites aside.
- In a medium bowl, mash egg yolks and combine with mayo, Buffalo sauce and salt. Spoon mixture into the hull in each egg white. Top with chopped scallions and serve.
