Greek-Inspired Zucchini Boats

Ingredients
  

  • 1 lb ground turkey (ground beef also works)
  • 1/2 white onion
  • 2 cloves garlic, minced
  • 2 tsp cinnamon
  • 1 tsp oregano
  • 1/8 tsp salt
  • 1/8 tsp black pepper
  • 1 (14-oz) can diced tomatoes, excess juices drained
  • 1/3 c crumbled feta cheese
  • 4 large zucchini

Method
 

  1. Preheat the oven to 350 degrees F.
  2. In a large skillet over medium heat, combine the ground turkey, onion, garlic, cinnamon, oregano, salt and pepper. Cook until the meat has browned, breaking it up as you do so. Drain the excess grease and stir in the diced tomatoes. Set aside.
  3. Halve the zucchini and scoop out the seeds, creating a trough in each one. Add the beef mixture, sprinkle with crumbled feta and place the boats on a baking sheet. Bake for 40-43 minutes, or until the feta has lightly browned in parts and the zucchini has softened.
