Green & Goldies Cookies

A chocolate oatmeal cookie studded with M&Ms and peanut butter chips, in honor of USF Bulls fans everywhere.

Ingredients
  

  • 1 stick unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup flour
  • 1/4 cup cocoa powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 1/2 cups quick-cooking oats
  • 1 cup peanut butter chips
  • 1 bag green M&Ms (mint M&Ms work well here too!)

Method
 

  1. Preheat oven to 350 degrees F. As it heats, beat the butter and sugars in a large bowl until light and fluffy, about 2 minutes. Blend in the egg and vanilla.
  2. In another bowl, combine the flour, cocoa, baking soda and salt, then gradually stir in the butter/sugar mixture and the oats. Once those are all mixed together, fold in the peanut butter chips and crushed M&Ms.
  3. Place one-inch blobs of dough on a baking sheet about 1 1/2 inches apart. Bake for 9 to 11 minutes, or until edges have set and the center still appears moist. (It will finish cooking as it cools.) Once cool, transfer to an airtight container, where they'll keep for up to a week.
